Feature:
Our Cheese and Wine Pairing
The fundamental
rule behind any food-wine pairing is that you try to unite the
flavors of both the wine and the food. It's all about balance and
harmony. Also, you do not want the distinctive flavors, tastes
and qualities of the food and the wine to fight with one another. You
are seeking balance and harmony. For instance, a fruity wine would
do very well with a nice, rich chocolate like
Marabou Milk Chocolate, even a dark chocolate, because the
sweetness of the chocolate would be coming from a different area as
the fruitiness of the wine. In the below paragraph, we will describe
three of our cheeses and wines that might go along with them. The
worst thing you can do is to become intimidated, with either the wine
or the cheese. Another preliminary
statement which must be said, is that these suggestions are purely
subjective and that the only way you can be sure they are good would
be to taste them for yourselves. Tasting food and wine is not so
much about finding the perfect wine and food, but the perfect food
and wine for you.
Gräddost
- a semi-hard cheese from Scandinavia. We would suggest tasting with
something like a Pinot Grecio, a Chenin Blanc or a Sauvignon Blanc
(Dry White Wine with a slight hint of fruit).
These wines would not take away from the distinctiveness of the
cheese. Priests Cheese
or Präst- a semi-soft, part skim cheese, from Sweden. We would
recommend tasting with a bold in flavor wine with a dry element, a
Chardonnay or something similar. (Medium bodied to dry white wine
with hints of oak and innate fruitiness). Ski Queen
Gjetost Cheese- Clean, slightly sour, sweet, caramel flavor;
smooth fudge-like texture; brown in color and sliceable with a
cheese plane. We would suggest a sweeter wine, something
like a White Zinfandel, Rose or even a Riesling. (A Semi Sweet to
Semi Dry White German-style wine, or a Semi-Sweet Blush wine). The
smooth texture of this cheese with the smooth texture of the
Riesling would compliment each other, while the qualities of the
slightly sour and caramel flavor from the cheese would remain in
tact.
Remember that your
tastes are your tastes. Do not listen to anyone who says you must
like what they think tastes good because they "know what tastes
good." You have to eat it. These suggestions are merely suggestions
to help inch you towards finding a perfect taste compilation. Good
